Jean-Francois Coche produced a total of 900 bottles (at 18 hectoliters/hectare) of his other-worldly 1995 Meursault Perrieres. This quintessentially elegant wine reveals liquid minerals intertwined with flowers, spices and stones. The French would say it is "aerien," meaning it is spiritual. On the palate, this highly defined and hyper-concentrated, thick, full-bodied yet perfectly delineated Meursault Perrieres exhibits waves of toasted almonds, hazelnuts, wet stones and an unbelievably long finish. Literally minutes after having tasted it my palate remained permeated with its sumptuous flavors. When I visited the domaine in January, 1997 to taste the 1995s Coche did not allow me to try them, saying they were being subjected to a severe fining. He then smiled, almost winked, and said "but when they are ready you will not find them to be too bad."
